SCRAMBLED EGGS
- Crack open 2-3 large eggs in a bowl
- Sprinkle Pates Family Seasoning in to your liking
- Pour in a hot oiled skillet and let sit for 45 seconds
- Then stir around to your desired doneness
- Sprinkle a little more Pates Family Seasoning on top
GUMBO
- 1 lb. andouille or smoked sausage
- 1 lb. shrimp
- 3/4 cup vegetable oil
- 1 cup all-purpose flour
- 1 large onion
- 1 large green bell pepper, chopped
- 1 large celery heart, chopped
- 4 large garlic cloves, minced
- 3-4 (32 oz.) boxes of chicken broth
- Seasonings: pepper, thyme, oregano, Pates Family Seasoning, chipotle
TURKEY BRINE
- 1/2 cup of whole peppercorns
- 5-6 inches of ginger root peeled
- 3 cuties or 1 orange, sliced and crushed, keeping the juice
- 4 cups or 1 quart of apple cider vinegar
- 1/2 cup of brown sugar
- 1/2 cup of white sugar
- 2 bags of tea, boiled in a cup of water
- 3 tbls of ginger garlic paste
- 1/4 – 1/2 cup of Pates Family Seasoning
- 2 lb.s of ice
- Put all ingredients into a 5 gallon bucket
- Add the bird
- Fill with cold water
- Let sit over night at least 12 hours (more is preferable)
- Then cook to your preferred cooking method. I faux-smoke mine on a weber grill.
